Awaji Well-being Week Special Event

Michelin-starred chef Kosuke Nabeta of the Michelin-starred "Sola Restaurant" in Paris, who won a Michelin star with his French and Japanese techniques
, will present a special dinner at
Zenbo Seinei
Using ingredients from Awaji Island, Japanese fermentation and seasonings,
Zenbo Seinei will present French cuisine that only can express.
Enjoy pairing of bio-wine and old sake.
Enjoy well-being through food.

Five Course Dinner Concept

Végane x Molécules x Couleurs

 Five colors of vegetarianism (red, green, yellow, white, and black) are the theme of the event.

 Local ingredients (mainly from Awaji Island and neighboring areas if necessary) are used.

 We will offer a 5-course menu that combines vegan food and molecular gastronomy.

Chef Nobeta Kosuke

Kosuke Nabeta, born in Kagoshima prefecture, Japan
He gained experience in Tokyo, London and Paris. 2018 he became the chef of restaurant Sola in the 5th arrondissement of Paris, awarded a star in the Michelin guide in 2019. 2020 he started to teach himself to make ceramics in the Corona disaster, and as a ceramic artist he has held solo exhibitions in Paris and spoken at the Paris Sola serves food in dishes made from restaurant waste (charcoal ashes, pigeon bones), and he has been working to create a "dining experience" that goes beyond "food". Sola aims to provide an "expérience totale" that goes beyond a "meal. He is also taking on the challenge of sustainability, such as being the first Japanese Michelin-starred chef to be awarded the "ecotable" label, one of the evaluation criteria for sustainable restaurants.
