Nobuaki Fushiki
He is a brewing chef and a
bearer of Japan's fermented food culture.
He is also active as an instructor of fermentation classes, and is one of the driving forces behind the current popularity of
"fermented foods" and "koji"
.
Megumi Chaki
After completing yoga teacher training in South India,
she has been teaching beach yoga, temple yoga, and
studio classes in her hometown of Aichi for 10 years, and continues to study yoga, Indian philosophy and Buddhism.
Guided by karma, she moved to Zenbo Seineiin April 2022. Moved to Awaji Island.
Whenever I get tired, I can come back, reset, and start from here.

Zenbo cuisine
The Zenbocuisine receives
chi from the four seasons on Awaji Island, which is rich in nature.
Zenbo SeineiThe original " Zenbocuisine" is made without
any animal products, white sugar, oil, dairy products, or flour.
Seasonings are naturally brewed seasonings made using
traditional methods over a period of one to three years.
Miso, soy sauce, mirin, and other seasonings are obtained directly from the brewery
and fermentation has not been stopped
Homemade amazake and soy sauce are used.
ZenboFor the kelp broth that forms the base of the dish,
the kelp used is carefully selected
from Rishiri, Hokkaido.
